10 Easy Whole 30 Recipes

May 31, 2016

You may be wondering why I’m writing about Whole 30 again – we did it, why torture ourselves anymore?

Well, we both feel like we’ve been doing a less than stellar job of meal planning and eating healthy ever since coming back from our vacation weeks ago. Although we have decided to just stick to Whole 30 during the week – we have way too many things going on during these summer weekends to commit to the full plan. We loved the meals we were making and it truthfully made us feel better.

I totally encourage anyone doing it for the first time to really plan and stick it out for those 30 days. It does take a lot of commitment and ‘staying in’ but I was glad we stayed on track (mostly thanks to Trevor)

Now that we are trying to tackle our weekday meal plan again I remember how much time and preparation it took. We will usually plan on Saturday or Sunday and grab everything we need before the week starts to avoid multiple trips to the grocery store like we’ve been doing recently. I make a calendar of meals and usually try my best to stick to it.

The trick is finding easy and quick dinners and making enough for leftovers.

I don’t have a ton of patience in the kitchen after work so things that are tasty but easy are essential. I also learned I need to make twice what we would normally eat so we can have leftovers for lunch the next day.

I rounded up 10 of my favorite weeknight meals and added in a few favorites of my own that I know friends have loved.

Jalapeno Turkey Burgers:

An easy and delicious recipe that you can add your own spice to! Burgers are a great ’emergency’ meal to have on hand and I we will usually make a few extra patties to freeze for a night when we don’t feel like cooking. jalapeno turkey burgers

Paleo Balance Bowl:

Bowls are everything! I never realized how easy they can be to whip up at home and with so many different combinations possible they will be your best friend. paleo balance bowl

Roasted Lemon Chicken With Potatoes & Rosemary:

A new favorite! I just made this last week and it’s so easy to combine everything and toss in the oven. It then makes for great leftovers!

Tropical Salmon:

Although I love salmon Trevor is not a huge fan and this was a recipe he actually liked. If you are not a fish lover I totally recommend trying this out.

Paleo Beef Kabobs:

Another perfect ’emergency’ meal. Make extras and keep these on hand to pair with anything from veggies to cauliflower rice.

Egg, Avocado & Tomato Salad:

A refreshing salad that make you feel like you are indulging in something without the guilt. I loved pairing small portions of this with dinner if you don’t want to make it your whole meal.

Sheet Pan Fajitas:

Quick, easy & tasty. A lot like my oven fajitas recipe you can add veggies, fresh tomatoes & avocado to this once it’s cooked and have plenty for lunch tomorrow.

Butter Chicken:

This is the recipe I probably hear about the most from friends and family. I encourage everyone to try it even if you are not sure you like Indian food. Healthy, filling & a total lifesaver on Whole 30.

Paleo Taco Bowls:

Another bowl favorite of ours that you can customize and make your own!

Cauliflower Soup:

An easy and hearty soup that has few ingredients but tastes great.
