Pie Makes Me Smile

i’m really trying to up my game in the desert field & this blueberry pie was a hit with trevor & myself so i thought i would share! we both like something sweet every now and then & i don’t like to keep unhealthy things around the house so i’m always trying to find ways to make yummy foods that we don’t feel terrible about indulging in. i used all natural & organic ingredients and nothing was hard to find. this crust is so simple and the filling takes no more than 10 minutes. you could really top it with whatever fruit you like and viola!

so here’s the rundown:

for the crust: combine the graham crackers, walnuts, egg white, canola oil, butter, & a pinch of salt. you can mix it in a food processor or if you are like me and don’t have one i just used my potato masher to crush it all together till it was a finer consistency.

once you have everything combined just spray a 9′ pie pan with oil and spread the mixture around the bottom of the pan and a small bit up the sides. cook this in the oven for about 8 minutes and remove to let cool!

while you are waiting for the crust to cool go ahead and mix the filling in your kitchen-aid. combine the reduced fat sour cream, reduced fat cream cheese, & a touch of the maple syrup on high till creamy.

spread the filling evenly on the crust and refrigerate for an hour. once cooled remove it, top with your preferred fruit, & drizzle the maple syrup on top (just a bit)

it was that easy! and if i must say so myself it was divine while it lasted. let me know how you like it if you try it out & this will definitely be a favorite coming out for the holidays!

crust:

1/2 cup walnuts

1 cup graham cracker

1 egg white

1 tablespoon butter

1 tablespoon canola oil

pinch of salt

filling:

8 ounces reduced fat cream cheese

1/4 cup reduced fat sour cream

1/4 cup pure maple syrup

2 cups fresh blueberries
