6 Healthy Recipes For Your Memorial Day Cookout

May 25, 2017

Whether you are hosting or attending a cookout this year, it’s always great to contribute a few healthy options since you know people will always be looking for some. Don’t get me wrong, I fully intend on chowing down on a burger and some cookies but it’s nice to have healthy options that taste great too.

I rounded up a few favorites and some I am excited to try this year. Since we just had a cookout for Cinco de Mayo/Derby I feel like I’m in full on BBQ mode. This year we are headed to my brother and sister in law’s for a low key relaxing day. Being on my feet for that long at this point is exhausting so I’m looking forward to putting them up and soaking up some sunshine.

Smoky Avocado Burger

Nothing quite says cookout like a burger and I love that this version is smoky and made from lean beef. I am not a fan of Spicy Mayo so I am planning on making it on the side. I think the Avocado mash will add plenty of creaminess on it’s own!

Crispy Sweet Potato Wedges

Nothing makes me happy quite like a french fry. Pregnancy has definitely enhanced that love (remember when I cried over the burger and fries?!) These are easy to prep beforehand and I think even non sweet potato lovers enjoy them!

Greek Chicken Kabobs

I always like to offer a non red meat option and these kabobs seem to hold their juice well! Plus, they’re super easy to prep beforehand saving you hassle the day of!

Trevor has been enjoying the Paleo and Whole 30 recipes I’ve been making lately so I was excited to add this to the menu for the weekend!

Tomato, Cucumber and Avocado Salad

This is similar to a salad I make all the time but with a fun twist so I thought I would try it out this weekend!

Coconut Water and Berry Popsicles

I’ve been dying to try some of these! I can’t wait to test them out this weekend and may do a flavored coconut water and switch up the fruit. Anyone done these before?

Hope these give you some good ideas for your own weekend plans this year. Here’s to hoping the weather is gorgeous and everyone gets to relax. What do you guys have planned this year?

  1. Yum! Those sweet potato wedges are making my stomach growl! I’m so excited to eat this weekend! We already made burgers last night for dinner and they were so good! I’ve never tried my burger with avocado though, so I’ll have to give that recipe a try some time. Have a great weekend!
