Life Lately XXV

TGIF! 

Zain is feeling much better today thankfully so he is off to school and I am trying to finish up some work, get a few drafts sent over and run some last minute errands before we leave next week. 

Trevor is actually flying out super early Sunday morning because he has his board exam on Monday morning in Tucson. It’s kind of insane how many exams and board he has taken at this point but such is life. I am super excited because we realized we haven’t taken a trip together since we had Zain. We’ve both traveled a few times for respective things but not together and a vacation is much needed. So, I am heading out to Tucson Tuesday morning and we spending a few days at a spa and hopefully getting some good hikes in and eating lots of delicious food. We haven’t been back to Arizona since our babymoon!

It’s been a while since I shared a Life Lately post around here so I thought we could catch up on things before I leave. I also wanted to say thank you for sending in such great ideas/questions for the blog. I have scheduled them all on my editorial calendar so keep an eye out for those and thank you again!

 

Birthday Dinner

I must say that dinner at Jack Fry’s for my birthday was one of the best meals start to finish that we have had in so long (Chicago included) It was nice that Trevor and I got to sneak away for a little bit even though he had got stuck at work all day, got called while we were at dinner and than had to go in at 4am that night. I felt terrible for him but luckily that was an extreme weekend and his call’s are never usually that busy.

Noms

Speaking of good food, I thought I would share a couple we’ve had here lately. We’ve been trying to eat out less during the week and not drink but allow ourselves to on the weekends. 

TJ's Cauliflower Gnocchi

This is the cauliflower gnocchi form Trader Joe’s (new grocery haul coming soon!) and so many of you messaged me thanking me for sharing our cooking instructions. I’m not sure why the package directions are terrible but we like to bake them. I set the oven for 375° and bake them for 30 minutes on one side and about 20 on the other. It spends how you like them cooked but I like a little crisp on the outside and a night doughy texture on the inside. I topped them here with the TJ’s vegan pesto and it was delicious.

A lot of you requested a Louisville guide and I am working on that for next week but this Bussman’s Bakery was lovely. They actually play tennis where my mom works and had been bringing in doughnuts which my mom told me were delicious. I ran to pick some up on a Saturday morning and they were awesome! I am a fan of light flaky doughnuts (more than cake) so these were right up my alley.

Trevor and i treated ourselves to a lunch out a few weeks ago on his half day. It was our first time at The Eagle and we liked it but fair warning the chicken at the medium level was not spicy. I think we need to try it again and heat it up! 

 

Fall Must Have’s

I haven’t bought a ton of new things for the fall season because most things are staples I have from previous years but I have added a new sneaker and pullover to my wardrobe that have been on heavy rotation. I did a lot of research on sneakers that would work for HIIT workout classes and look good just running errands and these Adidas Ultra Boost’s were it. I had to order 1/2 size up but some people messaged me saying they went down so maybe try them on in store or what I do and order two sizes and just ship back whatever doesn’t work.

Every year I don’t purchase a fuzzy pullover I get mad at myself for not doing it. So, when I saw Abercrombie released this new pullover and couldn’t get enough of this color I ordered one immediately. I am wear a small and there is plenty of wiggle room!

Last weekend we ventured down to the St.James Art Fair and Zain and Trevor wore their matching shoes. Truth be told I bought these for Zain last week and had totally forgot I got the same ones for Trevor, I guess I have a specific taste. Trevor keeps these shoes in his gym bag so I never see them but when he saw Zain’s he immediately whipped them out and Zain actually noticed they matched and did a little dance 🙂

We finally tried out Toddler Time at Sky Zone and although Zain was scared of the trampoline for the first 30 minutes he really warmed up to the foam pit. Totally recommend and I’m sure we will be back once the weather cools down!

Zain and I went down to Nulu Fest a few weekends ago with my friend Stephanie and her daughter Abigail and it was the perfect fall day. He got to try a sno cone for the first time and thoroughly enjoyed dancing in the street.
