A Crock-Pot® Slow Cooker Turkey Enchilada Quinoa

A holiday reset is always a good idea and one that is easy, delicious and perfect for leftovers is the perfect solution. As I mentioned last week, I have been trying a ton of new recipes to find our favorite healthy meals that are easy to throw together before or after work and keep us feeling full. Since being pregnant, I have been a tad more conscious of what I’m putting in my body since it’s fueling my babies growth and this meal has turned into one of our favorites. 

Mexican is a favorite flavor profile around here so I wanted to experiment with a quinoa dish in the Crock-Pot® slow cooker.  Quinoa is a such a great grain to use in everything from salads to breakfast dishes and everything in between! My mom would always make a beef enchilada type dish for us growing up and I was hoping to create something tasting similar with a much healthier twist. 

I subbed out the ground beef with lean ground Turkey and replaced the rice with quinoa. As a general rule, I never go too lean with the ground turkey. It can get really dry really quickly so I reccomend either the 85% or 93% but never the 99% lean. 

Most of the ingredients are things we generally having laying around and are easy to keep on hand for a while without worrying about them going bad. You can top it with everything from avocado to hot sauce and still keep it lean! Hope this helps your weeknight menu a little easier and let me know how you enjoy it!

Crock-Pot® Slow Cooker Turkey Enchilada Quinoa
An easy and healthy weeknight meal!

Ingredients
  1. 1 lb Lean Ground Turkey
  2. 2 Cups Uncooked Quinoa
  3. 1 Can Corn
  4. 1 Can Black Beans
  5. 1 Meduim Yellow Onion, chopped
  6. 2 Cloves Garlic, minced
  7. 1 Can Red Enchilada Sauce
  8. 1 Cup Chicken Broth
  9. 3 Tbsp Homemade Taco Seasoning
  10. 1 Tbsp Cumin
  11. 2 Tsp Coriander
  12. 1 Cup Mexican Cheese
  13. Mexican Cheese, Avocado and Salsa to top as desired!
Instructions
  1. In a large skillet, cook ground turkey completely
  2. Add ground turkey and all ingredients except cheese into crockpot
  3. Cook on High for 2 1/2 hours
  4. Stir and add cheese in then recover
  5. Cook for 1/2 hour and then serve with desired toppings!
