There isn’t anything I love more than a Saturday girls brunch and this spicy sweet potato soup and yogurt parfaits were the perfect pairing! After the New Year’s my friends and I all decided we would try to eat better and take more time to relax. My friend Anar gave us all adult coloring books for Christmas to aid in the relaxation so I thought I would host a girls brunch to help encourage the healthy eating!

Winter’s in Chicago can drive you to a whole new level of stir crazy. We go out so much less because of the weather making warm brunches at a friend’s house ideal! You can avoid waiting outside for a table and it’s fun  to relax and lounge on the couch after. For this New Year’s brunch I was excited to whip up a few healthy breakfast options and have some coffee, OJ and green tea on hand. Setting the  table for these is so fun for me and I was happy to dress it up!

I used Silk Unsweetened Almond Milk for the soup to create the creaminess & Silk Dairy Free Yogurt for the parfaits. The almond milk is completely plant based and has no saturated fat or cholesterol plus it’s lactose free. It was perfect since a few of my friends are allergic to dairy and it’s a great way to get that much needed protein! I filled cupcake holders with various types of granola so everyone could top their yogurt with whatever flavor they wanted and add as many fresh berries as they liked. The yogurt has 6 grams of soy protein and no added flavors or colors so you can feel good about the plant powered nutrition.

I placed encouraging cards under our yogurts for us to remind ourselves of the goals we want to stick to and set a brunch menu for everyone with an encouraging quote! Fresh berries and tulips are always a good idea and everyone seemed to love the food – I ended up giving out the recipe after we ate!

We realized after we don’t know why we don’t do this more often. Everyone felt full all day and didn’t indulge in their planned afternoon cupcakes because of it. I know we will be doing this far more often but I encourage you to as well – you can never underestimate how important quality girl time is! Spicy Sweet Potato Soup
A spicy warm soup perfect for winter!

Ingredients
  1. 2 Medium Sweet Potatoes, peeled & cubed
  2. 2 Tbsp EVOO
  3. 2 Cloves Garlic, minced
  4. 1 (32 oz) Carton Vegetable Broth
  5. 1/2 Cup Silk Unsweetened Almond Milk
  6. 4 Tbsp Curry Powder
  7. 4 Tbsp Chili Powder
  8. 2 Tbsp Cumin
  9. Salt & Pepper to taste
  10. 1/2 Avocado & 2 Slices Bacon to garnish if preferred
Instructions
  1. Add garlic & olive oil to large pot and heat for 5 minutes on medium
  2. Add sweet potatoes, broth & all spices to pot and bring to boil
  3. Leave partly uncovered on boil for 20-25 minutes
  4. Transfer to blender or use a handheld immersion blender to achieve creamy consistency
  5. Top with bacon & avocado if preferred
