my clean eating attempts have been doing well thus far and i wanted to share one that has been getting me through the days like this roasted cauliflower! telling y’all about my ideas makes me more accountable and cooking new things makes eating healthy easier and more exciting for me.
weekends are fair game and i enjoy no workouts and eating pizza, donuts, & all the carbs if presented (i mean what’s life without those things?!) the weekdays are go time for me and these indian inspired roasted cauliflower are a new fave.
my mom was in town last weekend for mother’s day and we had the place all to ourselves. i had a ton of cauliflower (pizza crust coming soon…) and she thought it would be yummy to try out some indian flavors on them.
we just combined some of our favorite spices with olive oil and tossed the cauliflower. after that we baked them for 25 minutes at 450 degrees in the oven & viola! we ate these in a day and couldn’t get enough. as always, i eat spicier things so if you aren’t keen on hotness dial the chili pepper flakes back by half.

1 head cauliflower
1/4 cup EVOO
1 tsp cumin
1 tsp tumeric
1 tsp red chili flakes
salt to taste
parsley to garnish
